Lemon & Pepper Kale

INGREDIENTS
1 kale shredded
1 red pepper sliced
1 lemon, zest and juice
40g butter
Salt and white pepper

1. Saute peppers gently in 25g butter until soft.
2. Add kale to pepper and continue cooking for 5mins.
3. Add lemon zest and juice and season lightly.
4. Stir in remaining butter and serve.
