We had so many people ask for our chocolate cake recipe at our cookery demonstration, that we have decided to put it up on our website for everyone to try. Enjoy!!!

TORTA CAPRESE
(Italian Flourless Cake)

4oz chocolate 70% cocoa (blitz in food proceser)
4oz ground almonds
4oz castor sugar
4oz butter, melted
2eggs, seperated

Method

1. Whisk egg yolks and suger together cook over a bain marie until a pale sabayon

2. Add the melted buter slowly to egg yolks

3. Fold in chocolate and almonds

4. Whisk egg whites until soft peak then fold into chocolate mixture pour into individual moulds or an 8 inch cake tin and bake for 20-25 minutes at 160ºC.
